Food Action – You’ll Be Surprised By What You Can Do!

 

On our little planet, the Earth, our (only) home, we produce food. A LOT of food.

But did you know that one third of all the food we produce, is never eaten? Isn’t that staggering?

And it gets worse.

Because here we are, producing all this food, and throwing away a third of it (!), and that food is:

  • Causing 80% of deforestation
  • Using 70% of all freshwater
  • Emitting 33% of all climate gases, leading to climate change.

This is what you’ll find – together with a lot more – on a wonderful new website called Food Action 

But it’s not just full of shocking information.

Recipe

Here’s a recipe I use often. It’s perfect for leftover veggies, and it’s quick and easy to make. I’ve copied it from the FAct website – I would normally add garam masala and chilli  for a spicy kick to it, but that depends upon your palate.

  • Serves: 1 to 6 (depending upon how many eggs and vegetables you use).
  • Preparation: 15 mins
  • Difficulty: Easy

Ingredients:

  • leftover vegetables
  • eggs
  • (The ratio of eggs and vegetables is 1 egg per 125g  / about 4oz of vegetables)
  • 2 onions, peeled and chopped
  • olive oil
  1. Chop or dice the leftover vegetables if required.
  2. Beat the eggs and lightly stir in one dessertspoon of cold water per egg.
  3. Fry the onion in olive oil.
  4. Once they are softened, add spices if you wish (e.g. garam masala, chilli) and fry briefly.
  5. Add the eggs on a fairly high heat.
  6. When the eggs begin to thicken, add the vegetables and stir.
  7. Cook until the frittata has reached the desired firmness and serve with a salad.
