Do you eat enough vegetables? Most people don’t. Perhaps it’s a hangover from childhood. Growing up in Ireland, our veggies were boiled to death and had no flavour. This has changed greatly now, but I still remember those dreaded veggies from those days!

Or perhaps you stick to one or two staple vegetables, and ignore anything else (I used to do that).

Vegetables are planet friendly (eating more veggies instead of meat helps to slow climate change). And some provide essential vitamins and minerals that you can’t get from any other food.

So, take a look at these five ways to eat more vegetables every day – and enjoy them!

Sneak Them In

Meatballs offer a perfect opportunity to sneak in some vegetables!

You need to chop them finely so they blend in – you can use an electric chopper, or a food processor, or chop by hand.

You won’t taste the extra veggies, but they’ll add extra flavor, as well as extra nutrition!

Other dishes also lend themselves to this – think lasagna, stews, soups and more. This is an easy, flavoursome way to eat more vegetables.

Keep it Colorful

For the best nutrition, you should eat vegetables of many different colours.

What about choosing a different color vegetable every day of the week?

You’ll be sure to get a wide variety of tastes and nutrients. And when you’re creative like that, you won’t get bored with eating the same old vegetables every day.

Juices and Smoothies

It’s incredibly easy to add veggies into yummy drinks. I wouldn’t normally touch broccoli or cauliflower with a 10-foot barge pole. But I’m happy to add them into smoothies. Why? Because when you make the drinks correctly, you simply don’t taste them!

You’ll Eat More Vegetables If You Prep Them!

Here’s a tip from Shape magazine. If you make it easy, you’ll do it. So prep your vegetables ahead of time.

I enjoy a nice big Sunday lunch. While I’m prepping that, I also prep my fruits and veggies for the week ahead.

When your vegetables are ready-to-use, you’ll add them into recipes, no problem. If you’ve got to peel and chop when you’re in a rush, you won’t.

Think about it.  You’re cooking a nice healthy omelet in the morning. If you’ve got ready-prepared veggies to hand, you add them in. If you’ve got to prep them, well, it’s not going to happen, is it?

Don’t want to peel and chop vegetables? No problem! Buy pre-chopped veggies at your grocery store.  Frozen veggies are also good – they’re picked at their prime and still have plenty of nutrients.

When it’s easy to add vegetables, you’ll include them with your meals. Simple.

Double Up

Most stews, stir-fries, and omelettes call for vegetables. You might add just the right number of veggies that the recipe calls for. (Or you might skip the vegetables altogether).

Instead, double the veggies in the recipe.

The chances are that adding more vegetables to a stew, chili, or stir-fry is not going to change the flavor profile of the dish. This is an easy way to double the amount of vegetables that you’re getting every day.

 

As you can see, it’s easy to add vegetables into your daily diet without sitting down to a big plate of steaming broccoli. Most of us don’t like plain old vegetables, so following these methods to add veggies to your diet is a great boost to your nutrition.
